C is for Cookies.

I found a recipe on facebook yesterday for these cookies. Peanut butter, chocolate chips, honey and no flour or sugar? That’s what I liiiike.  (read that as I said it in my best Big Bopper, “Chantilly Lace” voice, please.)

The recipe was simple and I’m all over simple recipes. Especially since I’m liable to only follow it once before I’ll make up my own variation.

I did make them a little more healthy than the recipe called for as I used homemade peanut butter. Yes, I’m *that* crunchy. (pun completely intended) I thought about substituting xylitol for the honey but I wasn’t sure if I would need the “liquid” from the honey. Maybe next time I’ll experiment. To completely cut down the sugar, since I so rarely eat it, I used sugar free chocolate chips.

Now for flour or lack thereof. Chickpeas or Garbanzo beans. I know, I know it sound way weird but it tastes way yummy! Do you like hummus? That’s garbanzo beans.  Garbanzo beans in your food processor.

Now, since I’m not sure I can post the recipe, I’ll send you to facebook for it. I’m sure if you search around for it, you’ll find it.  The recipe did claim to make fourteen 1.5″ cookies, but I only got 12. I also didn’t measure how big.
