I live!!

I haven’t died, or fallen off the face of the earth just yet. That might come, but I don’t know when, or where, or how…well I’m guessing I’d fall, all I know really is it hasn’t happened yet.

My life has been in a bit of an upheaval since last week. I thought I was just going to be filling in our church office this week for the secretary. I found out last week though she was leaving the position and I would need to cover for her indefinitely starting last Thursday.

So for the past week I’ve been trying to remember how to work in the office, homeschool, and wear all the other hats I wear.

I’ve been mostly a lot exhausted. I know that’s poor grammar, but it is exactly how I’ve felt.  I’ve been meaning to blog in the afternoon or evening but that means I’m not only on the computer all day in the office, then in the afternoon and evening I’m sitting here working away on it as well.

So I haven’t been as faithful a blogger as I would like to be. I am hoping soon I’ll figure out how to do it again and I’ll be back to cluttering up your life with my drivel.

I started another round of Whole30 with a friend of mine. This time is a lot harder than it was the first 2 times. Maybe my stress level has something to do with it. But no, it’s been nice and I’m not a stressed eater. (I’m not even a real eater of desserts)

If you’re curious about what Whole30 is, it’s wonderful! You take 30 days and eat clean. No legumes, grains, alcohol, sugar(sweets), and no dairy. You can eat all the fruit, veggies, protein (non-dairy) and fat that you want. Right

Right now, all I want is another piece of birthday cake with ice cream. Or french fries. My favorite meal has become breakfast. I love sauteing my veggies in clarified butter or coconut oil.



Here’s how I did it.


. I start by dicing some veggies. Dicing really isn’t the word. Chopping…maybe. I use onion, sweet pepper, mushrooms, and olives.

Really, I’ll throw about any veggie in there. If I happen to have some yellow zucchini, broccoli, cauliflower in they go. Asparagus is really good too!

When they are what the man of the house would call done, I slide them all to one side of the skillet and add a couple of eggs.


When the eggs are done, everything is done.

I used to always eat cheese on my eggs. But cheese is not allowed on the Whole 30, so some days just for a little added kick, I’ll add some salsa to my eggs.
